How to Economize

An article offering tips on how to economize on flour in bread-making. A select list of alternative flours – including cornmeal, buckwheat flour, soy bean meal, and potato flour – can be substituted for wheat flour. Suggested proportions of wheat flour to alternative flour for the purpose of making ‘war-bread’ are provided.
